The canteens of orphanages, schools, hospitals and prisons in Benevento were generally based on poor and essential diets. The documentation examined is an example of the local production real- ity that is in the background and to which the quantity and variety of food consumption recorded in the various institutes must be related and opens the perspective of the function of food in its daily dimension, on festive and representative occasions, creating the basis for the trademarks of the gastronomic specialties produced in the city since the nineteenth century and introducing the heated contemporary debate on the provenance and typicality of food products.

Abstract
